what's cookin' wednesday - pie crust "scones"

i am a cheater.  when it comes to cooking and baking, i will often seek out shortcuts and recipes that create dishes that look more complicated than they really are.  well, sometimes they look difficult.  other times, like today, they look as easy as they really are.

i found this recipe for "things to make with leftover pie crusts" and decided to make it applicable to the whole darn crust.  they have a scone quality about them that makes them perfect with tea or coffee.

Cinnamon and Sugar Pie Crust Cookies

Ingredients:
1 frozen pie crust, thawed
2-3 tablespoons butter, melted
1/4 cup sugar
2 tablespoons cinnamon
(or you can be like me and buy the pre-mixed sugar and cinnamon)
Directions:
Preheat oven to 375 degrees and prepare a baking sheet with parchment paper.
Unroll dough onto a lightly floured surface. Cut shapes into the dough (i used a cookie cutter and made  braided twists).
Brush butter over the dough. Transfer dough to the prepared baking sheet.
Mix together the cinnamon and sugar. Sprinkle mixture over dough.
Bake for 12-14 minutes or until the dough is lightly browned.
Transfer to a wire rack and allow to cool.
