what's for dinner wednesdays - pork, quinoa, and apple-green bean salad

ok, looking at that title does not make me want to rush into reading this post, when in reality this dinner is awesome!  so if you make it past the title and feel so inclined, please recommend a cooler sounding name.

i'm only going to give you the recipe for the green bean salad because it was one i found in a cooking mag and thought it sounded worth trying.  the pork was a boneless loin chop that i just pan fried in a little olive oil and seasoned with salt, pepper, garlic, and a hint of cayenne pepper.  and since apple is a classic accompaniment to pork, i cooked the quinoa in apple juice.  it gives it a nice, mildly sweet flavor.

saute 1 lb fresh green beans and 1 chopped apple in 1 Tbsp oil.  Add 1/2 cup walnuts; cook until vegetables are crisp-tender.  stir in 1/2 cup honey and top with toasted sesame seeds.  serves 5.


the only thing i changed was using less honey.  1/2 cup just seemed like a lot to me.  either way, a successful dinner if i do say so myself.  if you try this, let me know what you think.  and if you come up with a more appetizing title, let me know that too...
