what's cookin wednesdays - strawberry rhubarb pie

it's spring and both strawberries and rhubarb are in season!  there are tons of recipes for strawberry rhubarb pie out there and they are all pretty easy so i decided to make my own adaptation.  some of them call for tapioca but i decided to go with a very simple recipe below.

strawberry rhubarb pie
1 cup sugar
1/4 cup brown sugar
1/3 cup all-purpose flour
1 tsp cinnamon
2 cup strawberries
2 cup rhubarb
2 tbsp butter
pre-made pie crust

place bottom crust in 9-in pie pan.  mix first four ingredients in a bowl and set aside.  pour half of the fruit in the pan. sprinkle half of the mixture over the fruit.  pour the other half of the fruit in.  sprinkle the rest of the mixture on the fruit.  dot with butter.  (for some of my more cooking/baking challenged friends, cut the butter into multiple pats and place on top of fruit in random spots)  place second crust on top and bake at 450 degrees for 40-50 minutes.

i was lazy and cheated.  it is not hard to make your own pie crust but it was really sooo convenient to buy one ready made.  if you make your own, you may only need to cook at 425.  the 450 was according to the directions on the pre-made crust.  also, i didn't do the fun and fancy lattice top (i was feeling lazy, remember?) so if you don't do that either, make sure to cut a few vents in the top crust.  overall, super easy and delicious!


i ended up making another pie for an easter gathering and though i still didn't make a lattice top, i took a star cookie cutter and placed stars all over the top.  i think it turned out pretty great!

  1. One of my favorite pies! I made a bunch last summer in ND because I have a rhubarb patch in my yard there. I like the cookie cutter idea for the top crust. I'll try that on a pie this summer.
